Classroom Friendly Blueberry Muffins

I’ve been assigned the role of Mystery Reader in Luc’s class. One of those parental duties when reading The Day the Crayons Quit with verve is simply not enough to engage your young audience. They want treats and sugar free lollipops aren’t enough. (Too trite and sticky). While other sweets could warrant a flurry of emails from parents on responsible snacks along with their child’s nutritional requirements if a future feeding should arise. I settled on gluten, dairy and peanut free muffins.

Fresh blueberries add natural flavor to a recipe.

In the thick of winter blueberries are thriving somewhere (Peru) and the taste of summer is missed (January in Connecticut).

Mini muffins is a healthy alternative over candy and cookies.

Following the mix’s directions–supplementing with fresh berries and almond milk–allows me to serve something homemade, not ripped from loud packaging, and requires minimal effort.

Gluten Free Blueberry Muffins

Ingredients:

1 package Authentic Foods Blueberry Muffin Mix

2 large eggs

1/4 cup vegetable oil

1 cup milk, non-dairy substitute or buttermilk

1/4 teaspoon cinnamon (optional)

1/2 cup fresh blueberries (optional)

Directions:

Preheat the oven to 350 degrees Fahrenheit.  Grease the bottom of 12 regular size muffin cups or 24 mini size muffin cups or place cupcake liners inside the muffin cups.

Beat the eggs, vegetable oil and milk (or non-dairy substitute or buttermilk) in a large bowl until very bubbly.

Stir in the Authentic Foods Blueberry Muffin Mix and cinnamon. Stir until the flour is moistened and the batter is slightly lumpy.  Using a tablespoon or medium sized ice cream scooper, spoon the batter into the muffin cups.

Bake 20 to 25 minutes or until the muffin top bounces up when touched (the muffin is not ready if it sinks down when you touch it).

Remove muffins from muffin cups and cool for 10 to 15 minutes.

Green Is the Go To Color of 2017

The color of the year has been elected and home enthusiasts are colorfully dressing up rooms for its inauguration. Pantone’s Greenery has the kind of pastoral shade you’d see flying over Ireland. While green may seem more extreme than recent darlings like gray, neutrals or soft pastels, it’s always been a natural choice. Consider how grass and leafy trees blanket the outdoors, it has no choice but to blend with everything.

Find your aptitude for green in simple stages and begin by styling with accessories.

For those who are hesitant on the shade, test in subtle ways with accessories or accent pieces. I’ve always been a follower of green in fashion as the color pops and adds personality to a look. In my bedroom I added a throw and cosmetics case to the bed for a trial run that creates a snappy, effortless look.

From Simple to Daring, we show three ideas on how to design with this happy shade.

Designer Claire Paquin of Clean Design Partners offers a subtle take on this white bathroom. The addition of towels, modernist painting, and even the selection of toiletries direct the room’s theme without a major adjustment.

Make a bolder statement with such investment pieces as furnishings or an appliance. A predominantly white room keeps the statement on the colored piece. 3. Daring

The exterior of my Laguna Beach came painted in Grinch green, which I kept for laughs until the right shade presented itself. It may be in the right shade after all.

Ready to immerse yourself in green? Try painting your house in the bold shade. My Laguna Beach home came in green and I never had the heart to paint it even after neighbors pestered me on its color status. It fits into the landscape. I don’t need a house number as mail arrives just by saying “green house.” It stands out–in a good way.

The color continues indoors with tiling to complement the mustard yellow wood burning fireplace. What I first considered as a bit too Palm Springs mod, became quite prescient, hitting on this year’s color to confirm that sometimes it’s best to wait on any home alterations.

Shop It: Wayfair teamed with Pantone in the color selection, finding that bolder colors remain current in the design lexicon. “They may not be bright and airy but a vivid sofa in plush upholstery will have everyone fighting for a seat,” says Jessica Dowling, head of Wayfair Trade Services.

No Fuss Winter Gathering

After the holidays there is a tendency to hibernate until the appearance of crocuses lure us from our winter repose. Look to the cooler months as a time to celebrate simply and regularly, such as a light afternoon tea without the stuffy customs.

Find a look by connecting color and motifs.

A palette of frosted blue, silver and neutrals bring in light and awaken the senses. Pull in a theme, such as pears and colorful baker’s twine, then add delicate touches to finish the look.

3 steps to a simple winter gathering:

  1. Choose pieces with Gustavian colors to compose a wintry scene that warms the spirit.
  2. Serve elegant chocolates and a baker’s mix of cookies that complement the setting. Green tea is a warm, healthy beverage that follows the scheme.

No Fuss Christmas Decorating

The countdown to December 25th is clear. The neighborhood looks like a traveling Christmas exhibition from Vegas. Store windows are frosted with snow shot from an aerosol can and loud holiday signage. Years ago I found that decorating for the season was less stressful when I deviated from the conventional. Nothing against Santa but you will not find his appearance from a red felt hat or ornament in my home though stories about Saint Nick are encouraged. Blinking colored lights should be saved for a hotel vacancy sign. I choose items that I’d decorate for the winter season that happen to be intended for a major holiday.

Simple Holiday Tabletop Ideas

When hosting our annual Thanksgiving dinner I tend to channel those Oscar winning actresses who decide hours before the event on what they will wear. While I am not on a designer coveted-one-to-dress-list, a girl can dream, I play dress up on the tablescape.

A soup tureen and its accompanying pieces set the theme of this holiday celebration. Guess I will be making soup.

Over the years I have acquired a variety of tabletop pieces, either from pestering family members who retired their holiday hostess post or scouring thrift stores. As with dressing for an event, have fun by falling into the caprice of the moment.

Ways to simplify a memorable holiday table:

  1. Linchpin: Select your tabletop collection and create the theme around those pieces.
  2. Simplify: Restrain from pulling out all your trusted entertaining wares, which only adds chaos, and highlight your quality pieces.
  3. Mix: Weave in traditional with newer pieces for an updated look that shows a signature look.
  4. Natural: Save on pricey floral arrangements that will crowd the table over natural elements that add to the decor. Fruit, leaves and candles bring in color and warmth.
  5. Linens: Keep it simple, and fuss free, by eschewing a tablecloth for a runner, table mats or simply napkins nestled within a holder.

Ultimate Cottage Kitchen

For those who cook by spattering their apron and liberating the spice rack for an improvisational recipe, a cottage kitchen is the ideal venue. You could say that such a kitchen improves your cooking over a fussy space that would be in design disarray if you left a box of Raisin Bran on the counter. In the kitchen of my former Laguna Beach home, cottage charm blends with updated accents that secured it as the most popular place in the house.

Creating the design followed a low maintenance approach where small details added impact. Just steps from the front entry that leads to the beach, sandy dwellers is a frequent occurrence here.

Cottage Kitchen Design Process:

We kept the hardwood pine floors that flow throughout the home and installed a quick drying cement countertop.

Cabinets were given oomph with a sage green paint selected after testing a few samples and a few glasses of wine.

Open glass shelving showcases worthy pieces that support the kitchen’s look.

The farm style table was customized for the space. Since this is a smaller kitchen it accommodates a variety of functions.

Overhead pan rack adds to the kitchen’s needs in a small space.

Bring in personal collections for a signature touch, such as an arrangement of antique seltzer bottles that fit the scheme. Just be sure to use earthquake glue if you live in California.

Give a kid a coloring book and you may have given yourself 20 minutes of childcare without having to turn on Nickelodeon. Though coloring need not end once you hit middle school. There are books available for all ages and interests. It’s a classic way to calm the senses and release your artistic itch without having to live the life of a starving artist.

Simple Chili Recipe

Chili and I go way back. What was once designated as the only lunch option from base mountain restaurants has become a cool weather staple. As we experience the transition from summer to fall, the palette makes the transition from salad weather to chili weather. Now that embers shoot from old stone fireplaces and mini tornadoes of leaves skim the roads, I find that I am pulling out my spicy seasonings and the big cooking pot that will feel the simmer of the stove for half the day.

As with most dependable recipes, I will deviate from the basic ingredients with whatever looks good at the market.

Basic Chili

Serves 5

Ingredients:

1 teaspoon extra virgin olive oil

2 gloves of garlic

2 medium carrots, diced

1 small red pepper, diced

3 lbs. lean ground meat

1 ounce Italian stewed tomatoes

1 chili seasoning pack

1/2 cup red beans

1/2 cup black beans

Directions:

Drizzle olive oil into a large cooking pot and simmer garlic, pepper and carrots till soft.

Add meat and break up until brown with a wooden spoon, then add beans.

Add seasonings and tomatoes. Stir until blended.

Turn heat to low and cook for 15 minutes.

Serve with sour cream, fresh cilantro and bread.

Make enough for leftovers, which tastes even better the following day.

6 Steps to a Styled Thanksgiving

Whether it’s the autumnal decor or calendar blotted with competing plans, rumblings of Thanksgiving are happening in our household. We may eschew a trip to avoid the holiday chaos, which leaves our home as the natural destination.

1. Submit Seasonal for Holiday

Unless it’s vintage, decorating with turkeys and pilgrims is the same as assuming a Parisian flat crammed with Eiffel Tower trinkets. Let the mood of the season inspire your setting. Focus on personalized details over an expected annual setting. While this may be rebellion from when I had to polish the silver from my childhood holidays, you are sure to earn more ohs and ahs by tweaking tradition.

2. What to Serve?

If there is one holiday where you should not deviate from the traditional menu it’s Thanksgiving. Being served a rack of lamb over turkey and stuffing could cause a boycott from your guests. This is not the intention of a true hostess. Even if you don’t like mashed potatoes and gravy your palette craves traditional foods on the last Thursday of November. In fact, we can safely assume what Americans will be eating on Thanksgiving. The trick is supplement with a variety of choices like apple cider donuts for breakfast if you have overnight guests and pumpkin bread and corn muffins.

3. Setting the Table with Pizzazz

While formal dinnerware is great for newly marrieds who want to showcase their matrimonial goods, I prefer simple white dinnerware and weave in current accents. Working with a color scheme of gold, autumnal colors and touches of blue for a personalized note through accessories like the table runner, banners, floral centerpiece and drinking goblets.

4. In the Details

Bring in details that both cater to guests and show style, like a bouquet of barber striped straws in complimentary colors, salt cellars filled with seasoning and colorful paper napkins secured with holders to minimize cleanup.

5. The Kid Table

Set a toned down, more jovial version of your decor’s theme with the children’s table. Delineate the kid area with a holiday banner. Add leaves, colored pencils and paper for a playful touch, along with a Thanksgiving box and have young guests write what they are thankful for. Children can guess the writer and take turns reading. Chalkboard placemats occupy moments of lull. Edible centerpieces, such as a turkey pineapple or melon with feathered fruit skewers, is a whimsical and healthy addition.

While customary pie may get the most rounds of helpings, add other sweet choices to your dessert selection, such as candy apples with a sampling of tea, coffee, cinnamon hot chocolate and warm apple cider.
